My simple, delicious orange cake recipe

This one is a hit! Looking for a tasty gluten free moist cake then get a hold of this one! It is so simple and tastes AH-MAZING!

What you need:

  • 2 oranges
  • 3 cups almond meal
  • 4 eggs
  • 1 cup coconut sugar
  • 1 tsp cinnamon
  • 1 tsp all spice
  • 1 tsp baking powder

Place the whole 2 oranges in a saucepan and cover with water. Bring to the boil and boil for approx 15 minutes. Drain. Re-fill the saucepan with cold water, bring to the boil and boil for approx 15 minutes. Drain and repeat one more time. Drain and leave to cool.

Heat oven to 160 degrees and line a round spring-form cake tin with baking paper or butter the base and sides.

In a mixing bowl, whisk together the sugar and eggs. Then add in the cinnamon, all spice, baking powder and almond and mix well to combine.

Roughly chop the cooked oranges and discard and seeds and place in a food processor. Blend until smooth.

Add the oranges to your mixing bowl and stir through until well combined.

Pour the mixture into the cake tin and bake for approx 40-50 minutes.

ORANGE SAUCE

You can make an orange sauce if you wish and for this you would need:

Juice of 1 orange

1/4 cup coconut sugar

1/4 cup water

Mix all sauce ingredients in a saucepan over low heat until stirring until sugar dissolves. Remove from heat and pour over cake to serve.
